Sauce
=====
1 onion
1 stalk celery
1 carrot
2 cloves garlic
zest of 1/2 lemon
3 Tbsp olive oil
1 Tbsp butter
salt & pepper
1 tsp sugar
3 cups passata or pureed canned tomatoes (1 28 oz can)
1/2 cup milk
Meatballs
=========
1/2 lb ground turkey
1/2 lb ground pork
3 Tbsp fresh bread crumbs
1 clove garlic, minced
1 large egg, lightly beaten
1/2 cup grated Pecorino Romano
1/2 cup finely chopped basil (or basil & parsley)
salt and pepper
- add onion, celery, carrot, garlic, lemon zest to bowl of food processor ; process until minced
- NB : in lieu of that, grate onion, celery, carrot, garlic
- heat large saucepan over medium-low heat ; add oil and butter
- add minced vegetables and salt & pepper to taste
- saute until softened but not browned, about 10 minutes
- add sugar, tomatoes, 2 cups water ; cover & simmer for 15 minutes
- add milk ; cook uncovered for 15 minutes
- work on meatballs:
- in a large bowl, add meats, bread crumbs, garlic, egg and mix well
- add cheese, basil, salt & pepper to taste; mix thoroughly until blended
- form into teaspoon-sized meatballs (approx 80)
- add to sauce ; simmer, partly covered, until meatballs are cooked, 20-25 minutes
